so thanks to my little garden this year I managed to can 9 bottles of salsa last night... YUUUm. this is how or what i do when i can salsa.

Ingredients:

1/2 bushel tomatoes
4 chopped white onions
5 green peppers
11 hot peppers cut and seeded to your liking
1/2 c. salt ( i usually use a little less)
3 cloves of garlic

Directions:

Peel tomatoes, cut into quarters & put into large pan. Cook until thick or add tomato paste to thicken. Cut vegies with blender ( i just cut it myself bc i like it chunky) or food processor and add to large pan of tomatoes. Boil for 20 minutes stirring often. Place in jars and use hot water bathe or steamer for 55 minutes.

If your having a hard time peeling your tomoatoes... I place mine in boiling water for thirty seconds and the peel comes off very easy! Hope this helps someone!
