Default Easy Kabobs!

Takes about an hour from start to finish. Really easy, mostly because I did it. So it has to be easy for me to try it!!!!
I grilled them on a bbq.

Makes about 7 servings/ skewers.

Ingredients,
1 Green Bell Pepper Medium
1 Yellow Bell Pepper Medium
1 Red Bell Pepper Medium
1 Red Onion
2 doz. Cherry Tomatoes, not the tiny ones.
1 pkg. 12" bamboo skewers, don't use the metal ones, the veggies slide on them.

Meat,
I used boneless, skinless, chicken thighs, but any meat type of your preference is good to go!

Anyway, oh yea, quantity of meat......6 of the chicken thighs.
3/4 cup Lawry's Mesquite 30 minute marinade.
2 cups brown rice, and of course 4 cups water.
2 tbsp. Mrs. Dash Extra Spicy Southwest Chipolte Seasoning Blend. (Mrs. Dash spices are no salt, my wife says that good for me......)
9 Fresh Garlic Toes....PRESSED

Assemblage:
Cut up the meat of your choice, and put in bowl to Marinate. I usually let it sit for 1 to 2 hours, whatever.

Soak the skewers for at least a half hour in water before cooking.

Start the rice, add the spices and pressed garlic before it starts to boil. Gently stir with a fork.
Cut the Bell peppers into about 3/4" chunks, same with the onion.
Cut the meat into 3/4" cubes.
For presentation I put one tomato on each end.
So Tomato, onion, red, green, yellow slices, chicken etc. then cap off with tomato.

Lay all your skewers on the grill. Mine is kind of a hot grill, even on low, so I left the cover open. Rotate every 4 minutes a quarter of a turn. After all four sides are cooked then brush a little of the Marinade over each skewer.

After all four sides looked cooked, I then rotated another 1/2 turn and closed the lid to kind of sear/really cook the skewers for 4 minutes and rotated 1/2 turn again and closed the lid for another 4 minutes.

By now the rice is done. So serve up the skewers on a bed of your rice, and enjoy with a glass of your favorite vino!

SOOOOO GOOD! I LOVE LOVE LOVE Kabobs! I add little chunks of red potatoes to mine! That picture makes me droll!!
